With the weather being so beautiful in AZ as of late, you better believe we were at the farmer’s market bright and early this past Saturday morning. We always have the intention of showing up right when it opens, but we usually find ourselves sleeping in a little later than we’d prefer on our day off together. This time was different, and we were perusing the aisles bright and early as some of the stalls were still finishing setting up. It was nice to enjoy the array of goods with a little less of a crowd (at least for a few minutes!).
We wanted to make lunch for ourselves again from some farmer’s market finds like we did a while back (those posts here and here). We picked up some ingredients to make a hearty dip with our favorite Noble Bread – the “Country” loaf. Cauliflower, fresh herbs, Fiscalini San Joaquin Gold cheese, and garlic bulbs – the perfect starter ingredients to a satisfying and filling spread. The cauliflower was a beautiful orange hue, and we added turmeric as a seasoning to both intensify the color and flavor but also to reap it’s anti-inflammatory benefits. Adding a generous amount of the rich, buttery tasting cheese added deliciousness (and calcium) to the mix! The dip was tasty, filling, and healthy, and it couldn’t have been easier to create. Enjoy!
Warm Cauliflower Spread
- 2 heads of cauliflower
- 5-7 garlic cloves
- 1 cup shredded cheese
- Favorite cooking oil (we used both coconut oil and EVOO)
- Salt & pepper to taste
1 – Preheat oven to 400 degrees. Prepare a sheet pan with your favorite cooking oil.
2 – Clean and cut cauliflower heads into uniform, smaller pieces for roasting, and peel garlic cloves (leave whole).
3 – Coat cauliflower and garlic cloves in oil, and sprinkle with a generous amount of turmeric. Finish with salt & pepper to taste.
4 – Roast cauliflower and garlic for approximately 40 minutes in the oven. Stir and rotate the pan halfway through.
5 – Once cauliflower and garlic are fork-tender, pull from the oven and transfer to a blender or food processor. Add your cheese and 2-4 tablespoons of cooking oil, and blend to desired consistency (we preferred it a bit on the chunky side). Add more seasonings to taste, if you wish!
6 – Garnish with a sprig of rosemary or some freshly cracked pepper, and enjoy! You can indulge in this hearty spread on a toasted piece of bread, use it as a replacement for hummus with veggies or pita, or mix a spoonful in with your scrambled eggs in the morning!
