We’ve become big fans of protein pancakes within the last couple of months. Breakfast for dinner has been on a frequent rotation at the Lumpkin house after we discovered this healthy, protein-packed version of one of our breakfast favorites. We’ve tried Kodiak Cakes and Wild Roots, and we recommend them both!
While they’re great on their own or with a little syrup, we like to switch it up and add a little “umph” sometimes. Here’s three simple ways to take your pancakes from good to GREAT:
1) Pumpkin Chai Pancakes
- Replace the liquid in your pancake recipe with brewed chai tea. Add a spoonful of pumpkin puree and mix until slightly lumpy. Top cooked cakes with maple syrup, pumpkin butter, or apple butter.
2) Chocolate Banana and Nut Butter Pancakes
- Add a heaping spoonful of pure cocoa, a spoonful of your favorite nut butter, and 1 ripe, mashed banana. Top with maple syrup or a drizzle of extra nut butter.
3) Toasted Coconut Pancakes
- Replace the liquid in your pancake recipe with coconut cream or coconut milk. In a sauté pan, toast shredded coconut until slightly browned and add to pancake mix. Top your cakes with maple syrup.
